Smoked Duck and Fig Salad

Celebrate the start of autumn with this simple salad. The recipe is adapted from Angela Hartnett’s mid-week supper column in The Guardian.

Ingredients (serves 2)
1 smoked duck breast
4 green onions
1 bunch watercress, washed and torn
1 apple
4 figs
1/2 cup best olive oil
1 teaspoon dijon mustard
1/8 cup red wine or balsamic vinegar
salt and pepper

1. Slice the onions and put them in a large bowl with the watercress.
2. Core the appple and slice thinly, leaving the skin on. Add to the salad.
3. Cut the duck into thin slices across the breast and add to the salad.
4. Cut the figs into quarters and add to the salad.
5. Whisk the oil, mustard and vinegar, and toss with the salad.
6. Add salt and peper to taste and serve with crusty bread.
