Mustard and Rosemary Grilled Lamb Chops

We like to grill lamb chops; this recipe is for 6-8 smaller bone-in chops.

Mustard Rosemary Lamb Chops

6-8 smaller lamb chops, bone-in
¼ cup country style Dijon mustard (regular will do in a pinch)
2 green onions, thinly sliced, using green and white parts of the onion
2 Tablespoons white wine
1 Tablespoon balsamic vinegar
3 cloves garlic, minced
1 teaspoon fresh minced rosemary
1 teaspoon honey
1 teaspoon salt
1 teaspoon freshly ground pepper
1.       In a small bowl, stir together mustard, green onions, wine, vinegar, garlic, rosemary, honey, salt and pepper.
2.       Spread mixture evenly on both sides of chops.
3.       Place chops in a 9x 13 pan or on a large plate and chill 2-3 hours.
4.       Remove chops ½ hour before grilling. Grill on BBQ over medium heat, turning once halfway through grilling. Cook about 5-6 minutes per side.
