Grass Fed Beef Tacos

Tacos for One (4 small tacos)

1 J&R grass fed beef patty (1/4 lb. – thaw for 1 hour if frozen)
1 heaping Tbsp. coconut oil
2 heaping Tbsp. chopped onions
2 chopped mushrooms
4 corn tortillas
1 large Roma tomato, halved and sliced into ~ 12 pieces
2 c. baby spinach, chopped lettuce or other chopped greens
1/2 c. shredded cheddar cheese
Hot sauce

Prepare tomato, spinach, and cheese portions and place in individual bowls and place in refrigerator until served.
If you make your own tortillas (recommended) prepare masa corn meal dough balls and heat tortilla griddle on medium for at least 5 minutes. Then use tortilla press to make each tortilla and fry on the griddle – about 30 to 45 seconds on each side. Place each tortilla on a plate in a preheated 200 degree oven to keep warm. Otherwise, use store-bought corn tortillas and warm in oven or microwave.
Fry beef patty in coconut oil with onions and mushrooms. Use spatula to chop beef patty into small pieces while frying. When onions are translucent and beef is thoroughly cooked transfer mixture to serving bowl.
Assemble ingredients into each taco and add hot sauce to taste.
