Buffalo: High Protein and Lean

We stock buffalo whenever we can get it from local pastures. It always disappears quickly from our cases and remains a popular meat at J&R. Buffalo (also known as bison) is a tasty alternative to beef and a satisfying lean meat. Buffalo is a nutrient dense food, providing more protein and nutrition with fewer calories and less fat. Buffalo offers higher concentrations of omega 3 fatty acids as well as a greater concentration of iron per serving compared to other meats. And it is naturally flavorful and tender with a sweet, rich flavor. Buffalo should be prepared much the same way as grass-fed beef, which means generally lower temperatures and braised slow cooking. Be careful not to dry out buffalo on a hot BBQ grill.
