Here is a recipe for grass-fed beef tongue tacos; there are several sources about cooking tongue on the internet, including complete set-by-step instructions about cutting/peeling the outer layer of the tongue, with very helpful photographs. We are looking forward to trying this recipe for ourselves, which we found at Healthy Living How To: this recipe serves 4-6.

1 grass-fed beef tongue

1 medium onion, sliced

3 garlic cloves, peeled

6 cups beef broth

1 Bay leaf

Taco Seasoning
(you can use 1 envelope commercial taco seasoning, or make your own):

1 Tablespoon chili powder

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon crushed red pepper flakes

¼ teaspoon dried oregano

½ teaspoon paprika

1 ½ teaspoons ground cumin

1 teaspoon salt

1 teaspoon black pepper


1. Rinse tongue and place in pressure cooker or Crock-Pot.

2. Add onion, garlic, bay leaf and bone broth, enough to cover tongue.

3. If using pressure cooker, bring to high pressure and then cook for 1 hour. If using Crock-Pot, cover and cook on low 8-10 hours.

4. While tongue is cooking, mix up a batch of taco seasoning.

5. Remove tongue from pot and with a sharp knife make a slit down center of tongue. Peel skin.

6. Slice and dice or shred tongue and mix with taco seasoning; you can simmer it on the stove top to blend the flavors, or fry if you’d like to crisp it a little.

7. Serve with lettuce wraps or corn tortillas, taco fixings and rice on the side.

Recipe Notes

Taco Seasoning Recipe is the equivalent to one packet of commercial taco seasoning, which is enough for 1 lb. of beef.
