jr_meats_processingJ&R is a full service, state licensed butcher facility that can process ranch harvested livestock or wild game into neatly vacuum packaged cuts to your specifications. Managing Partner Jim Fogle has more than a decade of experience serving local ranchers, hunters and fair livestock buyers at Ralph’s Meats and Paso Meat and Sausage. Customers from all over California and beyond send Jim their meat year after year because they know it is going to come out the way the want it: professionally cut, well trimmed, nicely packaged and labeled with care. J&R’s hickory-smoked bacon and hams are delicious. Jim and his team have great sausage recipes for pork, lamb, game and beef. Our basic price for cutting and wrapping beef is $1.40 per pound, more for some species and special items like sausage. J&R operates the only USDA inspected Mobile Harvest Unit (MHU) in California. The MHU is a pioneering slaughterhouse on wheels that allows us to go out to local ranches and, in the most humane manner possible, harvest livestock and bring them to our processing plant in Paso Robles.
